Thơm hơn hẳn hạt tiêu, lại thêm vị cay cay,... chỉ cần cho vài hạt dổi rừng xay vụn khi ướp thịt để nướng hay pha nước chấm thì món ăn sẽ thơm ngon đặc biệt. Người dân tộc thường lấy hạt dổi rừng làm gia vị để chấm ăn cùng thịt lợn nướng, thịt luộc hoặc làm gia vị tẩm ướp. Khi chế biến, hạt dổi sẽ được nướng trên than lửa cho thơm, sau đó đem giã nhỏ như hạt tiêu

Hạt mắc khén. Mắc khén là loài cây mọc ở vùng núi rừng, hạt cho mùi thơm riêng mà ngây ngất. Trong hành trình khám phá miền cao , ngoài những cảnh đẹp làm say đắm lòng người, tôi cũng không thể nào quên được hương vị độc đáo của mắc khén quyện trong các món nướng. Đây là gia vị chủ đạo trong hầu hết các món ăn chính của đồng bào miền cao .

Vua Mèo Dương Trung Nhân ở bên Mèo Vạc. Nhà Dương ở trên núi bên Mèo Vạc, có một đường ống xây bằng đá dẫn nước xuống cánh đồng. Khoảng năm 1950, hai vua Mèo, Dương Trung Nhân và Vua Mèo Đồng Văn Vương Chí Sình, có xích mích rồi đem quân đánh nhau. Dương thua phải bỏ đất chạy sang Tàu rồi về Hà Nội, ở Hà Nội đến năm 1954 thì di cư vào Nam.

Vương Chính Đức (1865 - 1947) được đồng bào người Mông nơi đây suy tôn là vua Mèo và chính thức cai quản 4 huyện Quản Bạ, Yên Minh, Mèo Vạc, Đồng Văn.
